1 package (1 pound) coleslaw mix

½ yellow pepper, chopped

½ green pepper, chopped

2 carrots, peeled and shredded

½ cup red cabbage, chopped

1 cup fat-free Ranch dressing

2 tablespoons Dijon mustard

Ground pepper, to taste

Light Salt, to taste.
In a large bowl, combine vegetables. Pour dressing over vegetables and toss well. Season to taste with salt and pepper.
