4 Large Potatoes

1 tbsp. Cajun Spice

2 Large Egg Whites

Light Cooking Spray

Preheat oven 400 degrees.

Slice each potato length wise into ¼ in, ovals, slice each oval length wise into match sticks.  Coat a baking sheet with 3 sprays of the vegetable spray.  Combine the egg whites and cajun spice in a bowl.  Add the potatoes and mix to coat.  Pour coated potatoes onto baking sheet and spread them out in a single layer. 

Place baking sheet on bottom shelf of the oven.  Bake for 40-35 minutes or until golden brown, turning them every 6 to 8 minutes.  Serve immediately.
