Side Dish

2 cups drained pineapple tidbits (approx. one 15 oz can)
1 cup cooked shrimp, chicken, turkey or canned tuna
1 cup sliced celery
1 cup orange segments (1 can of mandarin oranges works too)
¼ cup peanuts or cashews (if desired for extra crunch)
Dressing:
¾ cup fat-free mayonnaise
½ - 1 teaspoon each of curry powder and garlic powder
1 tablespoon fresh lime juice
Toss ingredients with dressing (add dressing just before serving so it doesn’t become watery) |
